ZAO Farm
In 2024, Togyushi partnered with Zao Farm in Yamagata, Japan, to introduce their award-winning GI Zao Wagyu to the United States, marking its first appearance outside of Japan.
What began as a small family farm in the mountain highlands of Yamagata has evolved into one of Japanʼs most respected Wagyu programs. The GI designation reflects the highest standards of lineage and care, with each animal raised under precise conditions of environment, feed, and tradition.
At Togyushi, we work exclusively with female Wagyu, prized for their refined marbling, exceptional tenderness, and depth of flavor. This choice allows us to present a more delicate and nuanced expression of Wagyu.
This partnership shapes every aspect of our menu. In close collaboration with Zaoʼs farmers, our chefs honor the rhythms of breeding and care, composing omakase courses that reflect the natural progression of the farm. Raised to the highest standards and recognized with Japanʼs Emperorʼs Cup, Zao Wagyu is presented exclusively at Togyushi, offering a level of flavor and texture rarely experienced elsewhere.
